Prep ahead
- rinse canned chickpeas; cube paneer.
- dice onion; mince garlic, ginger; open crushed tomatoes.
- toast spices: cumin, coriander, chili, garam masala.
- start basmati rice.
Cooking steps
Fry paneer cubes in 1 tbsp oil until golden; reserve.
In same pan sautĂŠ onion 5 min; add garlic & ginger 1 min.
Stir toasted spices 30 sec; add tomatoes; simmer 5 min.
Add chickpeas and ½ c water; simmer 10 min. return paneer; cook 2 min more.
Finish with 1 tbsp butter and chopped cilantro. serve with rice.
