Prep ahead
- pat bone-in chicken dry; rub with kabsa spice mix, salt.
- slice 2 onions; mince 4 garlic cloves.
- rinse 2 c basmati; soak 10 min.
- measure tomato paste, diced tomato, whole spices (cardamom, cinnamon, cloves, bay).
- plump ¼ c raisins in warm water.
Cooking steps
Heat 2 tbsp ghee in dutch oven; brown chicken 3 min per side; set aside.
In same pot sauté onion 5 min; add garlic and tomato paste 1 min.
Add diced tomato, whole spices, and 3 c stock; return chicken; cover, simmer 20 min.
Lift chicken; stir drained rice and raisins into broth; nestle chicken on top. cover; cook low 15 min until rice tender.
Rest pot 5 min; fluff rice around chicken. garnish toasted almonds. serve family-style.
