Prep ahead
- soak 1 c dry chickpeas overnight; drain well.
- rough-chop onion, garlic, parsley, cilantro.
- chill bowl for falafel mix.
- set 2-inch oil to heat 350 °f.
- gather hummus ingredients; warm pita.
Cooking steps
Pulse soaked chickpeas with herbs, onion, garlic, cumin, coriander, salt, and 1 tsp baking powder until coarse paste. chill 15 min to firm.
Scoop 2-tbsp portions; shape balls. fry in 350 °f oil 3 min per side until deep brown; drain on rack.
Blitz hummus while falafel fry: chickpeas, tahini, lemon, garlic, cold water until smooth; drizzle olive oil on top.
Serve crisp falafel beside hummus, warm pita wedges, and salad or pickles. eat immediately.
