Prep ahead
- slice seitan into thin strips; toss oregano, garlic powder, oil.
- shred cucumber; squeeze dry; mix yogurt, garlic, dill, lemon for tzatziki; chill.
- chop tomato, cucumber, olives, feta for salad; dress with olive oil & oregano.
- warm pita on griddle.
Cooking steps
Sear seasoned seitan in hot skillet 5 min until edges crisp.
Spread tzatziki on warm pita, pile seitan, add tomato-cucumber salad; fold like gyro.
Serve extra salad on side. eat immediately while pita is soft.
