Moroccan Chickpea Tagine with Couscous

A warmly spiced Moroccan stew of chickpeas and vegetables simmered in tomato broth, served over fluffy whole‑wheat couscous.

Prep ahead
- dice onion, carrot, zucchini; mince garlic.
- open chickpeas & diced tomatoes.
- measure ras el hanout, cumin, paprika, cinnamon.
- bring 1 c stock to boil for couscous.
Cooking steps
Sweat onion in 2 tbsp olive oil 4 min; add garlic & spices 30 sec.
Stir in carrot, zucchini, tomatoes, chickpeas, 1 ½ c stock; cover, simmer 15 min until veg tender.
Meanwhile pour boiling stock over 1 c couscous; cover 5 min; fluff with fork, add raisins & parsley.
Season tagine with salt, lemon, fresh cilantro. serve ladled over fluffy couscous.
