Prep ahead
- dice lamb into bite-size; rinse lentils and chickpeas.
- chop onion, celery, carrot; mince garlic; grate ginger.
- measure spices: cinnamon, cumin, turmeric; open diced tomatoes; warm broth.
Cooking steps
Heat olive oil in soup pot over medium; brown lamb 3 min.
Add onion, celery, carrot; sauté 5 min until softened.
Stir in garlic, ginger, cinnamon, cumin, turmeric; cook 1 min aromatic.
Add lentils, chickpeas, diced tomatoes, and broth; bring to boil.
Reduce heat; cover and simmer 40 min until lamb and lentils are tender.
Season with salt and pepper; stir chopped cilantro. serve steaming harira with lemon wedges.
