Prep ahead
- slice smoked sausage; rinse lentils.
- dice onion, carrots, and potatoes.
- warm chicken broth; measure thyme and tomato paste.
- keep vinegar ready for finish.
Cooking steps
Heat oil in dutch oven; brown sausage 3 min.
Add onion and carrots; sauté 3 min. stir in tomato paste 1 min to darken.
Add lentils, potatoes, thyme, broth; bring to boil. reduce heat; simmer 35 min until lentils soft.
Season with salt, pepper, and splash apple-cider vinegar for brightness.
Ladle hearty stew into bowls; serve with rye bread.
