Prep ahead
- warm large flour tortilla in foil.
- rinse black beans; cook rice or use leftover.
- dice tomato and onion; mash avocado.
- mix spices: cumin, chili, garlic powder, onion powder.
Cooking steps
Heat oil in skillet; sauté diced onion and minced garlic 1 min. add ground beef; brown 5 min, crumbling.
Stir tomato paste and spice mix; cook 2 min. salt and pepper to taste.
Lay warm tortilla on board. in center layer hot rice, beef mixture, black beans, diced tomato, and creamy mashed avocado.
Fold sides over filling, roll firmly into burrito log. slice in half or serve whole while piping hot.
